Red Velvet Truffles {Christmas Series #2}

Hi everyone! With the festive season fast approaching, I decided to test out a few Christmas party/school break-up friendly recipes. Now this one does take a fair bit of preparation, however it is 100% worth it!

To make these truffles, you will need the following ingredients;

(Excuse the bicarb soda, I had another recipe in mind when setting up the ingredients)

125g unsalted butter, at room temperature

3/4 cup caster sugar

2 eggs, at room temperature

1 tblsp cocoa powder

1 tblsp red food colouring {my husband used 90% of my red food dye for his halloween costume without telling me so I only had 1/4 tsp, definitely don’t skimp on the food dye, as it will effect the christmas-y look of the truffles}

1/2 cup buttermilk {if you don’t want to purchase a carton of buttermilk just for this recipe, just squeeze 1/2 tablespoon of lemon juice into regular milk and let it sit for 10 mins, it will have the same effect}

1 1/2 cups self-raising flour

150g cream cheese, chopped, at room temperature

2/3 cup Icing sugar

3x 375g bags white chocolate melts

Milk chocolate, melted for decoration

  1. Grease & line a cake tin of your choice. I used a 22cm round cake tin.
  2. Beat butter & caster sugar in a small bowl of an electric mixer until light and fluffy. Beat in eggs, one at a time, until combined.butter sugarbeat eggs
  3. Add red food colouring & mix through thoroughly so the colour is even throughout the mixture. Beat sifted cocoa into wet mixture – it may curdle at this point, don’t panic, it will come back together once you add the rest of the ingredients.coco and red.jpg
  4. Stir in buttermilk & flour until combined {don’t overmix as it will result in tough cake}mix in flour.jpg
  5. Cook in a moderate oven (180C/365F or 160C fanforced) for about 35 minutes or until a skewer inserted comes out clean. Stand for 15 minutes, then transfer to wire wrack to cool completely {this is important, make sure the cake is completely cooled throughout before continuing with the next step}.
  6. Beat cheese & icing sugar in small bowl of an electric mixer until light and fluffy.
  7. Crumble cold cake into cream cheese mixture & stir to combine.truffle mix.jpg
  8. Roll tablespoons of mixture into balls & place on a lined tray {your truffles will probably resemble raw meatballs at this point}. Refrigerate until firm.roll into balls.jpg
  9. Melt the chocolate in a heatproof bowl over a pot of simmering water {ensure the bowl isn’t touching the water as this will cause the chocolate to burn}. Cool slightly, then dip truffles, one at a time into chocolate to coat evenly. Drain off any excess and place back onto lined tray. Refrigerate until set. dip in chocolate.jpg
  10. Drizzle set truffles with melted milk chocolate.

Extra Step: Place them in a fancy glass, strategically take a bite out of one, set up some baubles and take a picture to post on Instagram to prove to everyone you’re capable of baking a new recipe without it failing completely. No? Just me then? haha
